Ingredients

  • 4 medium zucchini (about 2 lbs), spiralized
  • 1 jar Albanese's Finest Original Marinara (24 oz)
  • 3 cloves garlic, thinly sliced
  • 2 tbsp olive oil
  • ¼ tsp crushed red pepper flakes
  • Fresh basil
  • Freshly grated Parmigiano-Reggiano (or nutritional yeast for dairy-free)
  • Kosher salt & cracked black pepper

Instructions

  1. 1Spiralize the zucchini and place in a colander. Toss with 1 tsp kosher salt and let sit 10 minutes. This draws out excess moisture. Pat completely dry with paper towels.
  2. 2Heat olive oil in a wide skillet over medium heat. Add garlic and red pepper flakes. Cook 90 seconds until golden and fragrant. Pour in the marinara. Simmer 5–6 minutes.
  3. 3In a separate large skillet, heat 1 tbsp olive oil over high heat. Add the dried zucchini noodles and toss for 2–3 minutes — just until slightly softened but still with some bite. Don't overcook.
  4. 4Add the zucchini noodles to the marinara sauce. Toss gently to coat. Serve immediately.
  5. 5Top with torn fresh basil and Parmigiano-Reggiano.
